Ingredient Spotlight – Mochiko Sweet Rice Flour

I first discovered sweet rice flour – also known as glutenous rice flour or sticky rice flour – when I was trying to make gluten-free gravy. Unlike its name suggests, it contains no gluten but it is higher in starch than most other gluten-free flours. That makes it a superior thickener for sauces, soups and gravies. Sweet rice flour is used in many dim sum and desert recipes as well. It’s also used in batter for Hawaiian Mochiko Chicken.

Well-stocked grocery stores may carry sweet rice flour. Asian markets almost certainly will. It can also be purchased online.
